Uve: 100% Chardonnay
Vinificazione: The base wine ferments and ages in steel until next spring when the tirage takes place, which begins the period of rest on the lees which we extend up to at least 36 months.

Piemonte

Località: Serralunga d’Alba (CN)
Uve: 70% Pinot Noir, 30% Chardonnay
Vinificazione: Separate white vinification for the two wines, in temperature-controlled steel tanks. Aged on the lees for 30 months.

Vinification: Fermentation takes place partly in natural oak vats, partly in French oak barriques and partly in steel. It spends over 40 months on the lees, developing a pressure of 4.5 atm together with a creaminess typical of Satén

Grapes: 58% Pinot Meunier, 25% Pinot Noir, 17% Chardonnay
Vinification: Processed with 30% of the wine from the previous vintage, steel, 2 years of yeast, zero dosage at disgorgement
Location: Vallée de le Marne, Francia
Grapes: 50% Pinot Noire, 40% Chardonnay, 10% Pinot Meunier
Vinification: Made from the vintage wine in steel, 20% of the previous vintage aged in large wood is added. Fully malolactic fermentation, resting on the lees for about 42 months. Zero dosage at disgorgement.
Location: Ville-Dommange, Francia

Vinification: Vinified and aged 8 months in stainless steel tanks, Bottled in 2011 with capsule and aged in underground cellars for a minimum of 10 years
