Vinification: First fermentation in stainless steel, bottle-ageing 24 months, disgorgement à la volée

Grapes: 100% Pinot Noir
Vinification: Fermentation in stainless steel, 24 months on the lees and 3 months' rest after disgorging
Location: Rilly La Montagne, Francia
Grapes: 50% Pinot Noir 50% Chardonnay
Vinification: Fermentation in wood for 8 months, second fermentation Champenoise method, maturation on the lees in the bottle for 48 months then disgorgement
Location: Avize, Francia
Grapes: 100% Chardonnay
Vinification: Malolactic fermentation in wood and 26 months on the lees, after disgorging ageing 1 year in bottle
Location: Chigny-les-Roses, Francia
Grapes: 58% Pinot Meunier, 25% Pinot Noir, 17% Chardonnay
Vinification: Processed with 30% of the wine from the previous vintage, steel, 2 years of yeast, zero dosage at disgorgement
